Chef Massimo Bottura is at the forefront of the future of food. His three-Michelin-star restaurant in Modena, Italy, has twice been named the world’s best restaurant. It routinely attracts pilgrims from across the globe, who have to book one of its 11 tables months in advance.
But Bottura believes that food goes beyond eating. His passions include a pasta lab where grandmothers teach teenagers the age-old art of tortellini making, and a network fighting food waste by feeding people in need.
